'I Lost 100 Pounds In A Year With 16:8 Intermittent Fasting And A Low-Carb Eating Plan'

My name is April Campbell (@snatched_journey), and I am 30 years old. I live in Laplace, Louisiana, and I am a stay-at-home mom. I committed to losing weight last year by following a low-carb plan, along with 16:8 intermittent fasting. I’ve lost 100 pounds.

Before losing weight, I struggled with always feeling fatigued. I was pregnant with my fourth child, and while I was pregnant, I dealt with high blood pressure. High blood pressure also ran in my family, so it wasn’t a surprise. But after having the baby, my blood pressure issues never went away, and I continued to eat whatever I wanted.

My relationship with food was horrible. During holidays or celebrations, I would stuff my face just because food was around.I’d overdo it on carbs, which would always end up making me feel sluggish and fatigued. I felt like I had no control with food, even after I was already full. At my heaviest I was 275 pounds.

On February 4, 2019, at 28 years old, I reached my breaking point.

I had a moment seeing myself in the mirror, unable to believe how I had let myself go. On that day, I told myself out loud that only I have the ability to change myself. It’s like I had a new mindset on weight loss.

From that day forward, I made notes on what I needed to do to change the way I felt about my body. I started journaling positive thoughts, as well as what I ate during the day and the workouts I completed, which helped keep me motivated.

I also started my low-carb lifestyle that day.

Once I decided I was serious about losing the weight, I started doing research on eating plans like keto, the carnivore diet, and low-carb diets. I ultimately chose a low-carb eating plan. A low-carb lifestyle worked for me (and still does!) because it was less restrictive. On this plan, I could still eat carbs as long as I fit them into my daily calorie intake for that day.

I also eventually added in the 16:8 method of intermittent fasting. I decided to try intermittent fasting after seeing all of the success story from people on YouTube. It was hard at first, but I was so committed to changing my lifestyle that I was able to overcome the cravings. After about two weeks, intermittent fasting became easy. Intermittent fasting does my body wonders and helps with my digestion and avoiding eating right before bed.

I also started calorie counting, which made me aware of how much I was really eating in a day, and it helped hold me accountable with my carb intake. I used the Carb Manager app for tracking.

I started drinking more water, too, which was something I never cared about before. I started out with a goal of drinking 64 ounces a day, which I eventually upped to a gallon. Water helps keep me full, and drinking water before I eat keeps me from overeating.

Here’s what I typically eat in a day:

  • Breakfast: A two-egg spinach omelet with two pieces of turkey bacon, or oatmeal and turkey bacon
  • Lunch: Tuna and eggs, or a low-carb turkey wrap
  • Snacks: Fruits like apples, bananas, or melons, with almonds and cashews
  • Dinner: Any meat and veggie combo
  • Dessert: A Fiber One brownie or granola bar

I started working out at the very beginning of my journey.

I did not work out at all before I started losing weight. So when I first started, I could barely finish a workout because I was so out of shape and exhausted. But I worked hard. My workout routine was sweating five days a week, which included walking and the elliptical. At the beginning, I walked in the morning for 30 minutes and did the elliptical after my last meal for 30 minutes.

Now, I walk and jump rope. I got into jump rope because I’m a stay-at-home mom, and I needed an exercise that I could easily perform and required minimum equipment. It wasn’t hard for me at all because it became something me and my daughter could do together. We have so much fun while doing jumping rope. I do not follow a specific jump rope workout, but I have a goal of jumping 1,000 jumps three to four days a week, and I also walk one hour every day.

In one year, I have lost a total of 100 pounds.

I want women to know it is possible and we all can do it. I also want to tell women to stop putting ourselves on the back burner just because we have children and busy lives. We cannot be our best selves to our children or anyone else if we are not truly happy with who we are.

I gained a wonderful confidence in myself that I had never seen before. The confidence is great, but even better, I am no longer fatigued, and I am able to run and play with my children.
