Giada's Sheet Pan Shrimp Is the Perfect Weeknight Recipe
When we think about seafood dinners, we usually think about meticulously grilled salmon, beachside clambakes, and terrifying pots of boiling water stuffed with live lobsters. Basically, we don’t usually think of fish or shellfish as weeknight meals. But some seafood is actually perfect for quick and healthy dinners. One succulent example? Shrimp. It cooks up quickly and has a mild, sweet flavor that means it pairs well with all sorts of other foods, which Giada De Laurentiis demonstrates beautifully in her sheet pan parmesan shrimp and veggies recipe.
The meal, from her blog Giadzy, comes together in just over 30 minutes. Giada opts for large peeled and deveined shrimp, which saves you a ton of prep work. For the veggies, you can use a selection of your favorites; just make sure to cut the firmer ones slightly smaller than the juicy vegetables so that everything cooks through in the same amount of time. De Laurentiis uses broccoli, onion, cauliflower, and cherry tomatoes in her produce mix.
The veggies are roasted for about fifteen minutes before the shrimp is added, along with Parmesan cheese and oregano for seasoning. Adding the shrimp after the veggies have been cooking for awhile ensures that it stays succulent and juicy, and that you don’t wind up with a pan of overcooked shrimp or undercooked veggies.
Before serving, the whole thing is sprinkled with fresh lemon zest, and you should serve it with a dish of lemon wedges on the side so people can squeeze them over their plates before eating. We wouldn’t say no to a side of toasted, olive oil-soaked ciabatta bread, either!
