Detox Shiitake Soup

Ingredients for 2 servings

For the shiitake soup

  • 150 g of Shiitake in 4-mm slices
  • 100 g of fennel – cut into thin strips
  • 100 g of Zucchini quarters and a 5-mm-slice
  • 60 g leek – halved and cut into rings

Liquid ingredients and spices

  • 700 ml of water
  • 2 TSP miso paste
  • 1 TBSP peanut oil
  • 1 TBSP Tamari (or soy sauce)
  • 1 TBSP finely grated ginger
  • 2 small cloves of garlic – finely chop
  • 1 TSP turmeric
  • black pepper from the mill
  • 1 TBSP finely chopped coriander


Preparation time about 10 minutes cooking/baking time about 15 minutes

The peanut oil in a saucepan. Shiitake, fennel, leek, ginger and garlic in it over medium heat for about 4 Min. sauté, then add the water and the miso paste, stir until it is dissolved.

The soup bring to a boil, and with Tamari, turmeric, and pepper. The Whole approx. 6 Min. simmer the Zucchini for a further 4 Min, then. mitköcheln.

The shiitake soup, season to taste and finally pepper, two soup bowls and sprinkle with coriander sprinkled enjoy.
