Ina Garten Just Shared a Memorial Day Cake That's So Easy Even Your Kids Can Make It
You may have the hot dogs and buns, chips and dip, and the coals for the grill at the ready, but what’s for dessert this Memorial Day? Skip the popsicles, and flex those baking skills you’ve been honing throughout this quarantine with Ina Garten’s fabulous Flag Cake. Perfect for this holiday weekend, Garten’s red, white, and blue-hued cake will have your entire family drooling over it’s fresh fruit and sugary-sweet, homemade icing.
“We may be stuck at home but we can still celebrate Memorial Day with a fabulous Flag Cake!” Garten captioned a photo of her Flag Cake, which was originally published in her 2002 cookbook, Barefoot Contessa Family Style. “It’s the perfect baking project with the kids. Or with anyone you love!!”
Like Garten said, wrangling in the kids for this baking assignment would make for a great family Memorial Weekend activity. But before you do, you might need to make another trip to the grocery store or the farmer’s market to pick up some fresh blueberries and raspberries. Because, as Garten points out in the comments, using frozen berries might give off water as they defrost.
Once you have all your ingredients gathered and your electric mixer fitted with the paddle attachment, you’ll start with making the batter. Have the kids ready to hand you the eggs, sour cream, and vanilla as you continue to mix the butter and sugar. Or, they can sift together the flour, cornstarch, salt, and baking soda in a bowl as you man the mixer.
When you’re ready for it, add the flour mixture into your creamy mixture. Pour into a pan, and while it’s baking, get the kids started on the icing, which combines butter, cream cheese, and vanilla.
Then comes the fun part: icing the cake, decorating it with the berries, and, finally, piping stars atop. It might be almost too pretty to eat — almost.
